watermelon cake


I made this healthy treat for dessert tonight.  I carefully cut a mini seedless watermelon and frosted it with truwhip topping from Whole Foods.  For the crumbs, I toasted unsweetened finely shredded coconut in a pan with coconut oil and coconut nectar. Topped it off with a coconut nectar drizzle and sweet cherries.  Will have the rest for breakfast tomorrow :)
